Ingredients
- 600 g fresh pineapple, peeled, cored and cut into 1 cm cubes
- 1 small red onion (or shallot), peeled and finely diced
- 1 fresh green chilli, seeded and finely chopped
- 2 Tbsp fresh mint, finely chopped
- 1 fresh lime, zested and juiced (or juice of 1/2 a lemon)
