Ingredients
- 8 slices French baguette
- 8 tsp olive oil
- 8 slices blue cheese (such as Castello Danablu 60+), sliced to match the size of each baguette round. Keep the slices thin to maintain balance, allowing the blue cheese to enhance rather than dominate the crostini.
- 2-3 figs cut into quaters or thinly sliced into rounds
- few fresh thyme sprigs
- 4 tsp honey
- salt and pink peppercorns (or black pepper, freshly ground)
Instructions
Preheat the Oven
Preheat the oven to 200°C (390°F). Line a baking tray with baking paper and set aside.Crisp the Baguette
Heat a non-stick pan over medium heat. Drizzle one side of each baguette round with half of the olive oil and place oil-side down in the pan.Turn & Toast
While the first side crisps, drizzle the remaining olive oil over the exposed side. Once golden, turn the slices and toast the second side until lightly crisp.Arrange for Baking
Transfer the toasted baguette rounds to the prepared baking tray, arranging them in a single layer.Layer the Toppings
Top each baguette slice with a thin slice of blue cheese, followed by fig quarters or slices.Add Honeyed Notes
