Ingredients
  

  • 400 g green beans, trimmed
  • salt and pepper
  • 200 g Danish feta
  • 150 g thick Greek yoghurt
  • 4 tsp olive oil, divided 3:1 lemon infused olive oil works well
  • 1/2 small lemon, zest and juice
  • 1 garlic clove, minced
  • 2 Tbsp Greek-style dukkah homemade or shop bought, or any other dukkah of your choice

Instructions
 

  • Prepare the green beans:
  • Place the trimmed green beans in a pot with cold water. Add 1/2 teaspoon of salt. Bring the water to a boil and cook the beans for about 10 minutes, or until just tender. Immediately transfer the beans to a bowl of ice water to stop the cooking process. Drain thoroughly. Toss the beans in a bowl with 3 tsp olive oil (lemon-infused if using) and season with salt and pepper.
  • Make the whipped feta:
  • Combine the Danish feta, Greek yogurt, remaining olive oil, lemon juice, zest, and garlic in a food processor. Blend until smooth and creamy. Transfer to a bowl and refrigerate until ready to use.
  • Assemble and serve:
  • Spread a generous layer of whipped feta on the bottom of a serving plate. Arrange the green beans on top. Sprinkle with dukkah homemade or shop bought for added crunch and flavour. Serve with the remaining whipped feta on the side for extra creamy, lemony goodness.

Notes

  1. You could make the whipped feta a day ahead and keep it in the fridge.
  2. If dukkah isn’t to your taste, you can easily substitute it with roasted flaked almonds or roasted chopped hazelnuts. For a festive touch, pistachios are an excellent choice—just be sure to roast them to enhance their flavour and season lightly with salt and pepper.
