Avocado soup cold
Equipment
- 1 Blender
Ingredients
- 3 large avos, peeled and stone removed
- 2 garlic cloves, minced
- 1 large lemon, juiced
- 400 ml chicken or vegetable stock
- 250 g Greek yogurt
- salt, white pepper and cayenne pepper
- tortilla chips or fried bacon pieces for decoration
Instructions
- Blend the avocado halves, the garlic, lemon juice, chicken stock and jogurt until you have a smooth consistency.
- Season with salt and pepper.
- Transfer the soup into a bowl and cover it.
- Chill the soup in the fridge for at least 2 hours before you serve it.
- Fill the soup into glasses and crush some tortilla chips over the top. Then dust with some cayenne pepper and serve immediately.
- Instead of the tortilla chips and cayenne pepper, you can sprinkle some fried bacon bits over the top of the soup.
