Blackberry sorbet
Equipment
- 1 Blender
- 1 ice cream machine
Ingredients
- 226 ml water
- 124 g castor sugar
- 250 g blackberries, washed
- 26 g glucose powder
- 1 juice of 1 lime, or half a lemon
Instructions
- Heat the water and sugar in a saucepan until the sugar is dissolved.
- Let the syrup cool down.
- Put the blackberries, glucose powder, sugar syrup and lime juice into the blender and process to a puree.
- Chill the mixture in the fridge for an hour.
- Churn the cooled mixture in an ice cream machine according to the manufacturer's instructions.
- Transfer the sorbet into a freezerproofed container, cover an freeze for at least 1 hour.
- Take the sorbet 10 minutes before you want to serve it out of the freezer.
