Ingredients
  

  • 4 pieces watermelon, cut into 6cm x 4cm, 3cm height, without skin and seeds, or any size you prefer
  • 4 pieces feta cheese, cut into the same size as the watermelon in width and length, but 1/2 the size in height
  • 4 tsp pumpkin seeds
  • 4 tsp pomegranate seeds
  • some micro leaves
  • 4 Tbsp honey
  • 4 Tbsp apple cider vinegar or fresh lemon juice
  • 1/2 tsp salt
  • freshly ground black pepper

Instructions
 

  • Assemble the Base:
    Arrange each block of watermelon on a serving plate and top with a block of feta cheese.
  • Add Crunch and Color:
    Sprinkle pumpkin seeds and pomegranate seeds around the watermelon and feta cheese.
  • Garnish with Freshness:
    Place micro leaves on top of the feta cheese and, if desired, scatter some around the plate.
  • Prepare the Dressing:
    Gently warm the honey, apple cider vinegar (or lemon juice), and a tablespoon of water in a heatproof jar for 30 seconds in the microwave to help combine the ingredients.
  • Season and Drizzle:
    Lightly season with salt, then drizzle equal parts of the dressing over the feta cheese.
  • Finish and Serve:
    Sprinkle with freshly ground black pepper and serve immediately.

Notes

Pomegranate balsamic cream or balsamic glaze can be used as an alternative to the honey dressing.
Nigella seeds or black sesame seeds add a striking visual contrast.
