Avocado soup cold

Ingredients
  

  • 3 large avos, peeled and stone removed
  • 2 garlic cloves, minced
  • 1 large lemon, juiced
  • 400 ml chicken or vegetable stock
  • 250 g Greek yogurt
  • salt, white pepper and cayenne pepper
  • tortilla chips or fried bacon pieces for decoration

Instructions
 

  • Blend the avocado halves, the garlic, lemon juice, chicken stock and jogurt until you have a smooth consistency.
  • Season with salt and pepper.
  • Transfer the soup into a bowl and cover it.
  • Chill the soup in the fridge for at least 2 hours before you serve it.
  • Fill the soup into glasses and crush some tortilla chips over the top. Then dust with some cayenne pepper and serve immediately.
  • Instead of the tortilla chips and cayenne pepper, you can sprinkle some fried bacon bits over the top of the soup.
