Ingredients
  

  • 8 slices French baguette
  • 8 tsp olive oil
  • 8 slices blue cheese (such as Castello Danablu 60+), sliced to match the size of each baguette round. Keep the slices thin to maintain balance, allowing the blue cheese to enhance rather than dominate the crostini.
  • 2-3 figs cut into quaters or thinly sliced into rounds
  • few fresh thyme sprigs
  • 4 tsp honey
  • salt and pink peppercorns (or black pepper, freshly ground)

Instructions
 

  • Preheat the Oven

    Preheat the oven to 200°C (390°F). Line a baking tray with baking paper and set aside.
  • Crisp the Baguette

    Heat a non-stick pan over medium heat. Drizzle one side of each baguette round with half of the olive oil and place oil-side down in the pan.
  • Turn & Toast

    While the first side crisps, drizzle the remaining olive oil over the exposed side. Once golden, turn the slices and toast the second side until lightly crisp.
  • Arrange for Baking

    Transfer the toasted baguette rounds to the prepared baking tray, arranging them in a single layer.
  • Layer the Toppings

    Top each baguette slice with a thin slice of blue cheese, followed by fig quarters or slices.
  • Add Honeyed Notes

    Scatter small thyme sprigs over the crostini, drizzle lightly with honey, season with a pinch of salt, and finish with crushed pink peppercorns.
  • Bake Briefly

    Bake for 2–3 minutes, just until the blue cheese softens and begins to melt.
