Blackberry sorbet

Equipment

  • 1 Blender
  • 1 ice cream machine

Ingredients
  

  • 226 ml water
  • 124 g castor sugar
  • 250 g blackberries, washed
  • 26 g glucose powder
  • 1 juice of 1 lime, or half a lemon

Instructions
 

  • Heat the water and sugar in a saucepan until the sugar is dissolved.
  • Let the syrup cool down.
  • Put the blackberries, glucose powder, sugar syrup and lime juice into the blender and process to a puree.
  • Chill the mixture in the fridge for an hour.
  • Churn the cooled mixture in an ice cream machine according to the manufacturer's instructions.
  • Transfer the sorbet into a freezerproofed container, cover an freeze for at least 1 hour.
  • Take the sorbet 10 minutes before you want to serve it out of the freezer.
