Ingredients
  

  • 1 sweet potato, cooked in skin (+/- 400 g)
  • 1 Tbsp olive oil
  • salt and pepper to taste
  • 1 Greek feta round, crumbled
  • 30 g roasted walnuts, roughly chopped
  • 30 g pomegranate seeds OR dried cranberries, chopped
  • 2 large dates, chopped
  • dressing:
  • 1 Tbsp olive oil
  • 1 tsp honey
  • 1 tsp fresh lemon juice
  • 1 handfull fresh wild rocket

Instructions
 

  • Prepare the Sweet Potato:
    After cooking the sweet potato, carefully peel it and slice into 2 cm medallions. Lightly brush each slice with olive oil and season with salt and pepper on both sides.
  • Caramelize the Medallions:
    Heat a non-stick pan and caramelize the sweet potato slices for a few minutes on each side until golden and slightly crisp. Set aside to cool.
  • Create the Flavourful Topping:
    In a mixing bowl, combine crumbled feta, chopped nuts, dates, and pomegranate seeds. Set the topping mixture aside.
  • Whisk the Honey-Lemon Dressing:
    In a microwave-safe jar, mix olive oil, honey, and fresh lemon juice. Warm gently for 10–20 seconds to help the ingredients blend smoothly into a luscious dressing.
  • Assemble the Platter:
    Scatter a layer of wild rocket on your serving platter. Arrange the caramelized sweet potato medallions on top. Spoon over the feta and nut topping and finish with a generous drizzle of honey-lemon dressing.
