Ingredients
- 1 sweet potato, cooked in skin (+/- 400 g)
- 1 Tbsp olive oil
- salt and pepper to taste
- 1 Greek feta round, crumbled
- 30 g roasted walnuts, roughly chopped
- 30 g pomegranate seeds OR dried cranberries, chopped
- 2 large dates, chopped
- dressing:
- 1 Tbsp olive oil
- 1 tsp honey
- 1 tsp fresh lemon juice
- 1 handfull fresh wild rocket
Instructions
- Prepare the Sweet Potato:After cooking the sweet potato, carefully peel it and slice into 2 cm medallions. Lightly brush each slice with olive oil and season with salt and pepper on both sides.
- Caramelize the Medallions:Heat a non-stick pan and caramelize the sweet potato slices for a few minutes on each side until golden and slightly crisp. Set aside to cool.
- Create the Flavourful Topping:In a mixing bowl, combine crumbled feta, chopped nuts, dates, and pomegranate seeds. Set the topping mixture aside.
- Whisk the Honey-Lemon Dressing:In a microwave-safe jar, mix olive oil, honey, and fresh lemon juice. Warm gently for 10–20 seconds to help the ingredients blend smoothly into a luscious dressing.
