  • microwave
  • sterilized jar of 250 ml or 300 ml

Ingredients
  

  • 75 g castor sugar
  • 30 ml fresh lemon juice
  • 100 ml fresh passionfruit pulp (including seeds)
  • 3 egg yolks, jumbo size
  • pinch of salt
  • 40 g butter

Instructions
 

  • Combine the sugar and lemon juice together in a heat-proofed (microwave) bowl.
  • Add the the passion fruit pulp and whisk well. You want to break down the membrane around the seeds.
  • Heat the mixture in the microwave for 1 minute before you whisk it well.
  • Repeat the previous step three times.
  • Stir the butter into the mixture until everything is well combined.
  • Pour into a sterilized glas and let it cool completely before storing it in the fridge for up to 2 weeks. Once open the curd should be consumed in 3 days.

Notes

Clean the glas in soapy water and sterilize it in a preheated oven (150 degrees Celsius) for 15 minutes.
