  • salt and pepper
  • 2 Tbsp olive oil, divided 1:1
  • 1 onion, finely chopped
  • 2 caspium, red and green, finely diced
  • 1 tin corn (optional), rinsed
  • 2 tins black beans, rinsed
  • 2 tins tomatoes, diced or whole
  • 500 ml chicken stock
  • 0.5 tsp sugar
  • 0.5 tsp cayenne pepper, or to taste

Instructions
 

  • Season the Chicken:
    Generously season the chicken fillets with 1 tablespoon of taco spice, salt, and black pepper on both sides. This step is essential for infusing the chicken with bold, smoky flavour right from the start.
  • Sear the Chicken:
    Heat 1 tablespoon of olive oil in a large pan over medium heat. Add the seasoned chicken and fry for 5 minutes per side. At this stage, it’s perfectly fine if the chicken isn't fully cooked through—it will finish cooking later.
  • Shred the Chicken:
