Ingredients
- 4 Tbsp olive oil
- 8-12 chicken pieces (drumstick, thighs)
- salt and pepper
- 1 large onion, peeled and finely chopped
- 3 sprigs rosemary; 2 sprigs finely chopped, 1 sprig for decoration at the end
- 1/2 tsp dried chili flakes
- 300 ml freshly pressed orange juice
- 100 ml sherry
- 3 Tbsp Seville orange jam
- 100 g black olives
- 1/2 orange, cut into slices, for decoration (optional)
Instructions
- Preheat the oven:Preheat your oven to 180°C (350°F) to ensure it's hot and ready for baking.
- Heat the olive oil:Heat olive oil in a non-stick, oven-proof pan over medium heat to prepare for frying the chicken.
- Season the chicken:While the olive oil is heating, season the chicken generously with salt and pepper to enhance its flavour.
- Fry the chicken:Fry the chicken in the hot pan, cooking each side until the skin becomes golden and crispy.
- Remove and keep warm:Remove the chicken from the pan once browned and set it aside in a warm place to keep it hot.
- Fry the onions:In the same pan, gently fry the onions, stirring until they become soft and translucent.
