Ingredients
  

  • meatballs:
  • 450 g chicken mince
  • 4 spring onions, finely chopped
  • 1 egg white
  • 2 tsp wheat flour
  • 1.5 tsp salt
  • 0.5 tsp chili flakes
  • 1 tsp ground star anise
  • 1 Tbsp soy sauce
  • broth:
  • 1.5 l chicken stock
  • 2 whole star anise
  • 2 Tbsp soy sauce
  • 30 g fresh ginger, peeled and cut into thin slices or matchsticks
  • 2 carrots, julienned or thinly sliced
  • 250 g pak choi, roughly chopped or each piece quatered lengthway
  • 250 g button mushrooms or exotic mushrooms, sliced

Instructions
 

  • Mix the chicken mince, spring onions, egg white, flour, salt, chili flakes, ground star anise an soy sauce in a bowl until well combined.
  • To form the meatballs, wet your hands with water and shape the mixture into 16 meatballs by hand, or use a small ice cream scoop, dipping it into cold water between each scoop to prevent sticking.
  • Heat the chicken stock with the star anise, soy sauce and ginger.
  • Add the meatballs as soon as the broth is hot and simmer for 10 minutes.
  • Then add the carrots, pak choi and mushrooms and simmer for another 10 minutes.

Notes

Usually, I use chicken fillet and put the meat with the other ingredients into the food processor.
Add some cooked rice noodles if you want the soup to be more substantial.
