Fig and artichoke pizza
Who does not love pizza? I wonder if I ever met anyone who struggles to eat pizza. Pizza in a more traditional way with tomatoes and basil or pizza with seafood or more modern pizza. Pizza is so versatile and goes with anything. The following recipe is inspired by the soon ending fig season here in South Africa.
Ingredients
- 1 quantity pizza dough, homemade (check my recipe) or shop bought
- 300 g artichoke pesto, homemade (check my recipe) or shop bought
- 100 g freshly grated pecorino or parmesan cheese
- 60 g grated mozzarella cheese
- 2 red onions, peeled and sliced
- 8 fresh figs, sliced
- salt and pepper to taste
- 10 g fresh basil leaves (optional)
- 6 slices Serrano or Prosciutto ham (optional)
Instructions
- Preheat your oven to 240 degree C.
- Divide your pizza dough into 2 larger or 4 smaller pieces and roll them on a flour covered surface out.
- Line your baking tray with non-stick baking paper and put 1 or 2 pieces of your pizza base onto the tray.
- If you make 2 pizzas in total use half of the artichoke pesto to cover one pizza base. Then sprinkle half of the pecorino or parmesan cheese on top.
- Top the cheese with half of the fig and onion slices.
- Season with some salt and pepper before you scatter half of the mozzarella cheese over.
- Bake in the preheated oven for 12 to 15 min.
- You can scatter some basil leaves and some ham over the top just before serving your pizza.
- Proceed with the remaining ingredients in the same way.
