A simple bread
There are so many good bread recipes out there, some are simple, some are complicated and some are a must have. This is a must have one. Passed on by my friend from another friend and so on…This is the recipe were you go to, when you want a quick fresh bread (sorry it is not a sourdough bread). There is no rising time, no preheating the oven or unusual ingredients. Sometimes I add 1 or 2 grated carrots, or whole hazelnuts or fennel seeds or….Since we are more bound to the house, people discover homemade things again and I think a homemade bread is top on the list. So give it a go and let me know what you think.
Equipment
- loaf pan 30×13 cm, stand mixer (if you don't want to knead by hand)
Ingredients
- 600 ml lukewarm water, divided 100:500 ml
- 1 tsp honey, molasse or sugar
- 10 g dry yeast
- 400 g white bread flour, extra for dusting the pan
- 300 g rye flour
- 3 tsp salt
- 80 g sunflower seeds or pumpkin seeds or sesame seeds or linseeds or almonds or a mixture
- 10 g margarine to grease the pan
Instructions
- Mix 100 ml of lukewarm water with the honey and the yeast in a big bowl (if you use your stand mixer, use the bowl of the mixer).
- Let the mixture stand in a drought-free spot covered with some cling film, until the yeast is all bubbly.
- Then add the rest of the lukewarm water, flour, salt and any kind of seeds or herbs you like to incorporate.
- Either kneed the dough for 5 minutes by hand or use the knead attachment from your stand mixer. It is a soft dough.
- Grease and flour your loaf pan and fill the dough into the pan.
- Transfer the loaf pan to the cold oven, set your temperature to 230 C and bake the bread for 50 to 60 min. You might have to cover the bread with some baking paper to prevent burning the top of the bread.
